🥗Healthier: tofu

💰Cheaper: chicken thighs

Tofu provides a plant-based option, while thighs are more affordable than breasts.

1

Start by marinating the chicken pieces, which are boneless chicken breast cut into about 1.5 inch pieces.

2

Add 1 teaspoon of salt to the chicken.

3

Squeeze the juice of 1 lemon into the chicken.

4

Add 2 teaspoons of ginger garlic paste to the mixture.

5

Add 1.5 teaspoons of black pepper to the chicken.

6

Add 1.5 teaspoons of cumin powder.

7

Add 1.5 teaspoons of garam masala.

8

Add 3 finely chopped green chilies to the mixture.

9

Add about 1/2 cup of yogurt (curd) to the chicken.

10

Add all of the heavy cream to the marinade.

11

Add a few chopped coriander leaves and some chopped mint leaves to the mixture.

12

Mix all the ingredients together until the chicken is well coated in the marinade.

13

Add 2 teaspoons of corn flour to the mixture and mix it in well.

14

Add 2 teaspoons of oil to the marinade and mix again.

15

Cover the marinated chicken and let it sit for at least 1 hour, or longer for better flavor and tenderness.

16

While the chicken is marinating, prepare the mint and coriander chutney by adding mint leaves, coriander leaves, 2 green chilies, a piece of ginger, and 2 cloves of garlic into a blender.

17

Add salt and 1 teaspoon of chaat masala to the blender (optional).

18

Add a quarter of an onion to the blender.

19

Add a little water and squeeze the juice of half a lemon into the blender.

20

Blend the chutney until smooth and set aside.

21

After marinating, skewer the chicken pieces onto bamboo skewers, ensuring they are well spaced.

22

If using bamboo skewers, wash them before use to prevent burning.

23

Transfer the skewered chicken to a microwave with a grill setting or an oven to grill.

24

Grill the chicken for about 15 to 20 minutes, turning occasionally.

25

After about 15 to 20 minutes, check for brown spots on the chicken as an indicator of doneness.

26

Apply melted butter on the chicken skewers while grilling.
