Make the sauce by mixing 1 tablespoon mayonnaise and 1 tablespoon barbecue sauce in a bowl.
Add 0.5 teaspoon Dijon mustard, 0.5 teaspoon honey, 0.25 teaspoon salt, 0.5 teaspoon garlic granules, and 1 teaspoon smoked paprika to the bowl and stir to combine. Taste and adjust as necessary.
Slice a small onion and a gherkin lengthwise for toppings.
In a frying pan, add 10 grams of butter and turn on medium-low heat to sweat the onions.
While the onions are sweating, divide 500 grams of ground beef into quarters to form quarter-pound patties without squashing them.
In the same pan, add 1.5 tablespoons of oil and increase the heat to medium-high.
Once the pan is hot, add the beef patties and season with salt and black pepper.
Smash the patties down with a spatula and cook until browned, then flip and season the other side with salt and black pepper.
Once cooked, add a slice of cheese on top of each patty and remove them from the pan.
To caramelize the onions, add 1 teaspoon of brown sugar and 1 teaspoon of vinegar to the onions and stir, then continue cooking until caramelized.
Toast the burger buns in the same pan after cleaning it quickly.
Assemble the burger by placing the cooked patties on the toasted buns, adding the sauce, caramelized onions, and pickles before capping with the top bun.
