Cut an X into the bottom of the tomatoes and drop them into a pot of boiling water.

After about 30 seconds, drop them into an ice bath to peel the skins off.

Dice up the tomatoes.

In a pan with oil, add the diced onion and sauté until cooked.

Add the diced tomatoes with their juices to the pan.

Add a little water, cover, and let it cook for about 5 minutes.

After 5 minutes, add tomato paste and seasoning, and optionally add pepper paste.

Put the mixture into a bowl and add medium bulgur, stir, and let it sit for about 30 minutes to plump up.

Once the bulgur is plumped, add parsley, green onions, and lemon juice, and mix well.

Grab a lettuce leaf, spread out the mixture, and use the lettuce as a spoon.
