Prepare the sourdough starter by mixing 1 cup of sourdough starter, 1 cup of water, and 1 cup of flour for an overnight rise.
Place the mixture in the warmest spot in the cabin, next to the warm chimney pipe, to rise overnight.
The next morning, check the sourdough mixture for bubbles, indicating it is alive and ready to use.
Add 1 egg, 2 tbsp of cooking oil, 1/4 cup of evaporated milk or cream, 1 tsp of salt, and 2 tbsp of sugar to the sourdough mixture and mix gently to incorporate.
Heat a griddle or cast iron skillet on the stove and add a thin layer of lard to grease it.
Allow the lard to heat until it smokes, ensuring the griddle is hot enough for cooking the pancakes.
Pour batter onto the hot griddle to cook the pancakes, adjusting the heat as necessary.
