Welcome to the kitchen to make red velvet white chocolate chip cookies.
Measure 1 cup of packed light brown sugar and add to a mixing bowl.
Measure 2 2/3 cups of all-purpose flour using a spoon and scrape with a butter knife to level off, then add to the mixing bowl.
Add cocoa powder, baking soda, and a pinch of salt to the dry ingredients and whisk until evenly combined.
In a separate bowl, combine 3/4 cup melted butter, 4 ounces of room temperature cream cheese, and the packed light brown sugar.
Add 2 teaspoons of pure vanilla extract to the wet ingredients and mix on medium speed until combined.
Add 1 whole egg and 1 egg yolk to the mixture, mixing on medium-low until combined.
Add 1 1/2 tablespoons of red food coloring and mix on medium speed until the color is well incorporated.
Gradually add the dry ingredients to the wet mixture in batches, mixing until just combined and scraping the sides of the bowl as needed.
Preheat the oven to 350 degrees Fahrenheit.
Fold in 2 cups of white chocolate chips, setting some aside for topping the cookies.
Scoop out cookie dough and form into loose balls, placing them on parchment paper with adequate spacing.
Press 3 to 4 white chocolate chips into each cookie before baking.
Bake in the preheated oven for 9 to 11 minutes, then let cool before serving.
