Combine flour, dark chocolate cocoa powder, baking soda, and salt in a bowl and mix until well combined. Set aside.
In another bowl, mix together eggs and vanilla paste. Add red gel food coloring and mix until well combined. Set aside.
Add softened butter to a stand mixer and mix until smooth.
Add regular sugar and brown sugar to the butter and mix for 2 to 3 minutes until well incorporated.
Slowly stream in the egg, vanilla, and red food coloring mixture while mixing on low speed.
Gradually add the dry ingredients to the wet mixture, mixing gently to avoid overmixing.
Add white chocolate chips and mix until well combined, using a spatula if necessary to ensure everything is mixed in.
Use a 2-inch ice cream scoop to portion out cookie dough and place on a tray.
Chill the cookie dough for at least 1 hour, preferably 4 hours or longer, covered with Saran Wrap.
Preheat the oven to 350°F.
Line a cookie sheet with parchment paper and space the cookie dough balls at least 2 inches apart.
Bake cookies for 10 to 12 minutes, checking at 11 minutes for doneness.
If cookies spread too much, use cookie cutters to reshape them while they are still warm.
