Preheat your oven to 180° C.
Line a baking tray with parchment paper.
In a mixing bowl, add 1/2 cup of margarine or butter and cream it for around a minute until fluffy, scraping the sides of the bowl.
Add 3/4 cup of sugar and whip until fully combined, scraping the bowl again.
Crack in 1 egg and whip for around 2 to 3 minutes until the batter is light and fluffy, scraping the bowl in between.
Add around 5 drops of red food color and mix until fully combined, scraping the bowl again.
Add a pinch of salt, 1 teaspoon of baking soda, and 1 teaspoon of cocoa powder, then fold in the ingredients using a spatula.
Add 1 1/2 cups of all purpose flour, folding in half at a time and scraping the bowl to ensure everything is combined.
Fold in 1/2 cup of chopped white chocolate.
Refrigerate the dough for around 30 minutes before baking.
Preheat your oven at 180° C for 10 minutes before baking.
Using an ice cream scoop, scoop out the dough and transfer to the baking tray, spacing them evenly.
Roll the dough in the palm of your hands and add extra white chocolate on top if desired.
Bake the cookies for around 10 to 12 minutes at 180° C.
After 12 minutes, check the cookies; they should smell incredible and look well baked.
Let the cookies sit on the baking tray for around a minute before transferring them to a cooling rack.
