Preheat the oven to 350 degrees Fahrenheit.
Wash and place 6 Granny Smith apples in a 9x12 baking pan with about 1.5 cups of water.
Bake the apples in the oven for 1 hour until they are soft and saggy.
Remove the skins, cores, and stems by pressing the apples through a sieve to make apple puree.
You should have about 2 cups of apple puree after pressing.
Separate 2 egg whites from the yolks and place the whites into the bowl of a stand mixer.
Whip the egg whites on medium-high speed for about 10 minutes until glossy and fluffy.
Add sugar to the whipped egg whites and mix until combined.
Reserve 1.5 cups of the apple cream for later use.
Divide the remaining mixture evenly between two quarter sheet pans lined with parchment paper.
Smooth the mixture out evenly in the pans.
Bake in the preheated oven for 4 to 6 hours until the pastila is dry to the touch and firm enough to lift.
