Ingredients

  • 1 ripe banana

  • 2 tbsp sugar
  • 1 tbsp melted butter
  • 1/4 tsp vanilla extract
  • 2 tbsp chocolate chips
  • 1 tbsp milk

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a mixing bowl, mash the ripe banana until smooth.
  3. 3Add the melted butter and sugar to the mashed banana and mix well.
  4. 4Stir in the vanilla extract and milk until combined.
  5. 5In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. 6Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. 7Fold in the chocolate chips gently.
  8. 8Pour the batter into a greased or lined small baking dish or ramekin.
  9. 9Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  • 1/2 cup chopped nuts (optional)

Instructions

  2. 2In a mixing bowl, combine the mixed berries and half of the honey or maple syrup. Spread the berry mixture evenly in a baking dish.
  3. 3In another bowl, mix the rolled oats, protein powder, almond flour, cinnamon, and salt.
  4. 4Add the melted coconut oil and the remaining honey or maple syrup to the dry ingredients. Stir until well combined.
  5. 5If using, fold in the chopped nuts into the mixture.
  6. 6Spread the oat mixture evenly over the berries in the baking dish.
  7. 7Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the berries are bubbling.
  8. 8Remove from the oven and let it cool for a few minutes before serving.
  9. 9Serve warm, optionally with yogurt or ice cream.
