In a mixing bowl, mash the ripe bananas.
Mix in 2 eggs and 1 teaspoon vanilla extract.
Add 1/2 cup maple syrup and 1/4 cup coconut oil, mixing well.
In another bowl, combine 2 cups oat flour, 1 teaspoon baking soda, a pinch of salt, and 2 teaspoons cinnamon.
Mix the dry ingredients into the wet ingredients until combined.
Fold in 1/3 cup dark chocolate chips and some extra chocolate chips.
Pour the batter into a greased loaf pan.
Bake for 30-35 minutes or until a toothpick comes out clean.
