Preheat the oven to 350°F (175°C).
Line two 8 1/2-inch loaf pans with parchment paper or use non-stick baking spray.
In a large mixing bowl, add 1 cup of softened unsalted butter.
Add 1/2 cup of white granulated sugar and 2 teaspoons of vanilla extract to the bowl.
Cream the butter and sugar mixture together with a mixer for a couple of minutes.
Add 1 cup of Greek yogurt or sour cream to the mixture and mix for about a minute.
Add 4 large eggs at room temperature to the bowl and mix until well combined and beaten.
Pour in 1 cup of pure maple syrup and mix briefly until combined, noting it may look a little separated.
In a separate bowl, combine 3 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of sea salt.
Sift the dry ingredients into the wet batter and mix just until everything is well combined and smooth.
Cut 2 large very ripe bananas into small pieces and mash them with a fork.
Add the mashed bananas to the batter along with 1 1/2 cups of salted roasted pistachios, pulsed into chunks.
Add a 12-ounce package (or 1 1/2 cups) of semi-sweet chocolate chips to the batter.
Use a spatula to fold everything together until you have a uniform batter.
Divide the batter evenly between the two prepared loaf pans.
Sprinkle mini chocolate chips over the top of the batter in each pan for extra chocolate flavor.
Bake in the preheated oven for about 65 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread sit in the pans for about 5 minutes after baking.
Use the parchment paper tabs to lift the bread out of the pans onto a wire rack to cool completely.
