In a pot, add cleaned smoked fish, shrimp, and precooked escargots with some water.
Season with seasoning broth and salt, cover, and let simmer for about 10 minutes.
Add a large quantity of water and cover again.
Add onion, tomato, and dried pepper to the sauce and cover.
In another pot, add plantains, water, and salt, and cover to cook.
Once the plantains are cooked, start mashing the foufou mixture until smooth.
Add red oil to the mixture based on preference and mix well until homogeneous.
Form the mashed mixture into balls.
