Cumberland Pie, originating from the Lake District in England, is a hearty dish traditionally made with minced meat and topped with mashed potatoes. It reflects the rustic, comforting nature of British cuisine, often enjoyed in family gatherings. Today, variations abound, with some incorporating vegetables or different meats, making it a versatile favorite in homes across the UK.

Peel the carrots and cut them in half lengthways, then dice them.
Cut the celery into smaller dice than the carrots.
Peel and dice the onion.
Heat a heavy-bottomed pan and add a good splash of olive oil.
Add the diced onion and cook gently for about 5 minutes.
Add the minced beef and cook, breaking it up with a wooden spoon until browned.
Stir in the beef stock, tomato puree, diced celery, diced carrots, sage, thyme, bay leaf, and black pepper.
Taste the mixture and add salt if needed, then reduce the heat and let it cook for about 20 minutes.
Prepare the mashed potatoes by peeling and cutting them into even-sized chunks.
Place the potato chunks in a pan of water, bring to a boil, then reduce to a simmer with a lid for about 20 minutes until tender.
Make a slurry with 2 teaspoons of corn flour and 2 teaspoons of cold water, then stir it into the meat mixture to thicken.
Add a handful of frozen peas to the meat mixture and cook for about 5 minutes before turning off the heat.
Use a potato ricer to mash the potatoes until smooth, adding butter, salt, white pepper, grated cheddar cheese, and a splash of milk while mixing until smooth.
Weigh out 30g of grated cheese and the same amount of breadcrumbs, then mix them together for the topping.
Spread the meat mixture into a cast iron casserole dish and top with the mashed potatoes, smoothing it out with a palette knife.
Cover the mashed potatoes with the cheesy breadcrumb mixture.
Preheat the oven to 180°C (convection) or 200°C (conventional) or gas mark 6.
Bake in the oven for about 30 minutes until the top is bubbly and crispy.
