Egyptian Style Beef Shawarma Sandwich

750 g top sirloin steak
1 medium onion
1 tsp sumac
1 tsp black pepper
1 1/2 tsp salt
2 tbsp vinegar
juice of half a lime
2 cups parsley
3 medium tomatoes
small red onion
1/4 cup tahini
1/4 tsp salt
1/4 tsp pepper
1/2 tsp cumin
1/4 cup water
2 cloves garlic
3 tbsp oil
2 tbsp butter
kaiser rolls or any kind of bread

Cut 750 g of top sirloin steak into strips against the grain for tenderness.

Slice 1 medium onion into slices.

In a bowl, combine beef strips and sliced onions with 1 tsp sumac, 1 tsp black pepper, and 1 1/2 tsp salt.

Add 2 tbsp of vinegar and the juice of half a lime to the bowl and mix.

Leave the beef to marinate for at least half an hour.

Chop 2 cups of parsley, 3 medium tomatoes, and a small red onion to make a salad.

Season the salad with 1/2 tsp of salt, 1/2 tsp of sumac, and the juice of half a lime.

To make the tahini sauce, combine 1/4 cup tahini, the juice of half a lime, 1/4 tsp salt, 1/4 tsp pepper, 1/2 tsp cumin, and 1/4 cup water in a blender with 2 cloves of garlic.

Blend all ingredients together until creamy.

Heat 3 tbsp of oil in a cast iron skillet on high heat and sear the marinated beef for a couple of minutes on each side.

Add 2 tbsp of butter to the skillet and stir for 30 seconds.

Add 3/4 of the chopped veggies to the beef and turn off the heat, then cover the skillet for one more minute.

Prepare the sandwich using kaiser rolls or any kind of bread you prefer.

Add 2 tbsp of tahini sauce to the sandwich and additional veggies if desired.

Serve with pickles.
