Heat olive oil in a large pot over medium heat until shimmering.
Add diced onion and minced garlic; sauté until translucent, about 3-4 minutes.
Stir in diced beef and cook until browned on all sides, about 5-7 minutes.
Add diced potatoes, pumpkin, carrots, and corn; mix well.
Pour in enough water to cover the ingredients and add bay leaves and cumin.
Bring to a boil, then reduce heat to low and cover; simmer for 30-40 minutes until vegetables are tender.
Add green beans and cook for an additional 10 minutes.
Season with salt and black pepper to taste.
Remove bay leaves before serving.
Garnish with chopped parsley before serving.
