Sausage and Apple Traybake

4 medium carrots
2 red onions

6 to 8 thick pork and apple sausages

2 tablespoons whole grain mustard
1 teaspoon garlic granules
2 tablespoons honey
a pinch of thyme

Wash the potatoes and cut them into wedges, leaving the skin on.

Trim and chop the carrots into chunks about the same size as the potatoes, leaving the skin on.

Place the potatoes and carrots into a saucepan, cover with boiling water, and season with salt.

Cook the potatoes and carrots for about 8 minutes, then drain and set aside.

Cut the two red onions into wedges and place them onto a baking sheet.

Take the apple, remove the stem, cut it into quarters, remove the core, and cut into wedges about the same size as the onions.

Place the apple wedges onto the same baking tray as the onions.

Add the sausages to the tray with the vegetables.

Pour the drained vegetables over the sausages on the tray and spray with cooking oil, then toss to coat everything evenly.

Season with salt and pepper and toss again to coat evenly.

Preheat the oven to 200°C (380°F) and roast the tray for 20 minutes.

In a mixing jar, combine 200ml of apple juice, 2 tablespoons of whole grain mustard, 1 teaspoon of garlic granules, 2 tablespoons of honey, and a pinch of thyme, then stir to combine.

After 20 minutes, carefully take the tray out of the oven and pour the mustard and apple glaze evenly over the sausages and vegetables.

Toss gently to coat everything in the glaze and return the tray to the oven for another 20 minutes.
