1 cup coconut milk
2 tablespoons curry powder
1 teaspoon turmeric
1 tablespoon ginger
3 cloves garlic
1 medium onion
2 tablespoons lime juice
1 teaspoon salt
2 cups pineapple
1 medium red onion
1 medium cucumber
1/2 cup cilantro
1 green chili
1/2 teaspoon black pepper
2 tablespoons olive oil

Marinate chicken thighs in coconut milk, curry powder, turmeric, ginger, garlic, lime juice, salt, and black pepper for at least 30 minutes.

Heat olive oil in a large skillet over medium heat until shimmering.
