Sri Lankan Chicken and Rice

1/2 cup vinegar

3-4 pieces of rampe
handful of shredded carrots
1 cup shallots
2 lb chicken drumsticks
1 tsp red chili flakes
1 tbsp red chili powder
1 tsp turmeric powder
1 tbsp cumin powder
1 tsp garam masala powder
1 tbsp tandoori masala powder
1 tsp pepper powder
1 tbsp ginger and garlic paste
juice of 1 whole lime
75 g butter
2 tbsp butter
whole garam masala (1 piece of cinnamon, 4 cardamoms, 3-4 cloves)
1 large piece of rampe
1 large onion, finely sliced
2 tbsp ginger and garlic paste
1 chicken stock cube
1 large tomato, finely chopped
water (enough to cook the rice)
salt as needed
3 cups long grain basmati rice

Remove the seeds from 250 g of dates and add them to a small bowl.

Add 1/2 cup of vinegar to the dates and mix well. Let it sit for about 15 minutes.

Crush 1 tsp of mustard seeds in a mortar and pestle.

In a blender jar, add the soaked dates, 1 tsp of ginger and garlic paste, salt as needed, 1 tsp of red chili powder, and 1/4 tsp of pepper powder. Blend to a fine paste.

In a cooking pot, add the blended paste, 1 stick of cinnamon, 2 cardamoms, crushed mustard seeds, 1 tbsp of jaggery powder, a handful of curry leaves, and 3-4 pieces of rampe. Mix well.

Cook the mixture on medium heat until it starts boiling, then remove from heat and let it cool completely.

Add a handful of shredded carrots, 1 cup of pat-dried shallots, and slitted green chilies to the pickle mixture. Mix well and adjust salt as needed. Let it sit for about 2 hours before serving.

Marinate 2 lb of chicken drumsticks with 1 tsp red chili flakes, 1 tbsp red chili powder, 1 tsp turmeric powder, 1 tbsp cumin powder, 1 tsp garam masala powder, 1 tbsp tandoori masala powder, 1 tsp pepper powder, 1 tbsp ginger and garlic paste, and the juice of 1 lime. Mix well and let it marinate for about 1 hour or overnight.

In a cast iron pan, add 75 g of butter and melt it. Fry the marinated chicken covered for 15 minutes on medium heat.

Remove the chicken from the pan and set aside. In the same skillet, add 2 tbsp of butter and whole garam masala (1 piece of cinnamon, 4 cardamoms, 3-4 cloves). Fry for about 30 seconds.

Add a large piece of rampe and 1 large finely sliced onion to the skillet. Sauté for 1-2 minutes.

Add 2 tbsp of ginger and garlic paste and sauté for another minute.

Add 1 chicken stock cube and 1 large finely chopped tomato to the skillet. Cook for 1-2 minutes until the tomatoes are sautéed well.

Add enough water to the skillet to cook the rice and salt as needed. Allow it to boil.

For 3 cups of basmati rice, add 4 1/2 cups of water. Cook on medium heat for about 7 minutes until the rice is about 50% cooked.

Add the fried chicken on top of the rice and cover the skillet. Cook for another 6-7 minutes, placing a piece of foil paper on top for perfect cooking.

After about 14-15 minutes, the rice is ready for serving.
