Its name translates to 'big tart' and reflects the rich culinary heritage of Switzerland, where tarts and pastries are staples. This dish highlights local ingredients like apricots and almonds, celebrating the region's fruit cultivation. Today, variations exist across Switzerland, with different fruits and nuts used, making it a beloved treat for many.

Walnuts provide healthy fats while being more affordable.
Combine all ingredients except the meat in a bowl and mix well.
Place the meat in the mixture, ensuring it is completely covered.
Cover and marinate in the refrigerator for 10-14 days, turning occasionally.
After marinating, dry the meat and sear it in a pot with heated butter.
Remove the meat and set aside.
In the same pot, sauté the vegetables, onions, and garlic.
Add tomato paste and sauté briefly.
Dust with flour, stir briefly, and deglaze with the marinade.
Bring to a boil and let it cook for 5 minutes.
Add veal stock and bay leaf, and simmer for 2-3 minutes.
Return the meat to the pot, reduce heat to low, cover, and braise for 2.5 hours, turning the meat every 20 minutes.
