1 lb 90 percent lean ground beef
2 carrots, peeled and diced
1 onion, peeled and diced
1 potato, peeled and diced
1 rib of celery, diced
2 cloves of garlic, minced
1 cup corn (frozen)
10 oz gluten free elbow macaroni
(1) 20 oz can of crushed tomatoes
1 cup of gluten free beef broth
1 tbsp of Hungarian paprika
½ cup of red wine
2 tbsp low fat sour cream or Greek yogurt
salt and pepper to taste

In a large pot, brown the ground beef over medium heat until fully cooked.

Add the diced onion, carrots, potato, celery, and minced garlic to the pot and sauté until the vegetables are tender.

Stir in the corn, crushed tomatoes, gluten free beef broth, Hungarian paprika, and red wine.

Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.

Add the gluten free elbow macaroni and cook according to package instructions until al dente.

Season with salt and pepper to taste.
