In modern times, Ukwa has gained popularity beyond its local roots, with variations appearing in various African cuisines and among diaspora communities.

Soak ukwa in water for several hours or overnight.
Boil the soaked ukwa in a pot until tender, about 30-40 minutes.
Drain the ukwa and set aside.
Heat palm oil in a separate pot over medium heat until it becomes clear.
Add chopped onions to the oil and sauté until translucent.
Stir in chopped scotch bonnet pepper and cook for 2-3 minutes until fragrant.
Add the cooked ukwa to the pot and mix well with the sauce.
Incorporate seasoning cubes and salt to taste.
Add crayfish and ogiri, stirring gently to combine.
Simmer for 10 minutes to allow flavors to meld.
Add corn and cook for an additional 5 minutes.
Serve hot.
