Macedonian sausages, known as Kebapi, have roots in the Balkans and are a staple in Macedonian cuisine. Traditionally enjoyed during family gatherings and celebrations, these sausages are made from a mix of meats and spices, reflecting the region's rich culinary heritage. Today, Kebapi are popular not just in Macedonia but across the Balkans, often served with fresh bread, onions, and a side of ajvar, a pepper-based condiment.

Fire up the Weber grill and settle it around 250 degrees.
Place the Macedonian sausages on the grill.
Close the lid and let them cook for about 30 minutes.
After 30 minutes, flip the sausages over.
Continue cooking for about 1 hour total, flipping the sausages occasionally.
Check the internal temperature of the sausages, aiming for around 150 degrees.
Sear the sausages over hot coals for a couple of seconds to finish them off.
Bring the sausages inside and slice one open to check for flavor.
