In a pan, mix sugar, heavy cream, and honey, then bring to a simmer.
In a separate pan, melt sugar and boil until golden brown.
Mix the cream mixture with the caramel, stirring constantly until it becomes golden brown.
Remove from heat and add chopped walnuts, mixing well.
Place the walnut filling in a form slightly smaller than the baking pan to refrigerate.
In a food processor, mix soft butter with sugar, pulsing several times to combine.
Add heavy cream to the butter and sugar mixture, pulsing several times.
Add flour and pulse several times until the mixture resembles crumbs.
Divide the dough into two pieces; one for the bottom and one for the top.
Spread the bottom half of the dough evenly using wet hands in a 24 cm baking pan.
Place the walnut filling inside the bottom crust.
Cover with the top half of the dough, spreading it evenly with wet hands.
Brush the top with a beaten egg and decorate as desired.
Bake in the oven for 40 to 45 minutes.
