Set Instant Pot to saute.

Add oil and onions. Saute until translucent, about 5 minutes. Then add garlic and chicken. Sear chicken about 1-2 minutes. Flip and sear the other side.

While the chicken is searing, add shoyu and honey in a small mixing bowl and whisk to combine.

Pour sauce in Instant Pot. Set to sealing. Cancel saute mode and cook on manual high pressure for 15 minutes.

When completed, quick release and return pot to saute. Remove chicken from sauce. If sauce needs thickening, you can add 1 tablespoon of cornstarch to 1/4 cup of water and pour mixture into sauce. Cook for 1-2 minutes until sauce thickens. Return chicken to sauce and toss to coat.
