Sift 155 g all-purpose flour into a bowl.

In a bowl, combine the plums with 100 g brown sugar, 2 tbsp cornstarch or potato starch, 1/2 tsp cinnamon, a pinch of salt, 1 tbsp lemon juice, and 1 tsp vanilla extract.

Toss the plums gently until evenly coated and let them sit for 10 minutes to draw out their juices.

Roll out the chilled dough and line a 9-inch pie dish with it.

Prick the pie crust with a fork.

Place the plum filling with juices into the dish and sprinkle with brown sugar.

Bake in a preheated oven at 190 °C for 55 minutes until golden brown and bubbling.
