Fasching 2024 - Selbstgemachte Faschingskrapfen (Homemade Mardi Gras Donuts)

In a large bowl, combine the lukewarm milk, sugar, and dry yeast. Let it sit for about 10 minutes until frothy.

In another bowl, mix the flour, salt, nutmeg, and lemon zest.

Add the melted butter, eggs, and vanilla extract to the yeast mixture and stir well.

Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Once risen, punch down the dough and roll it out to about 1/2 inch thickness.

Cut out circles using a round cutter and place a small spoonful of apricot jam in the center of half the circles. Top with the remaining circles and seal the edges.

Heat oil in a deep pan to 180°C (350°F). Fry the krapfen in batches until golden brown on both sides, about 3-4 minutes per side.

Remove from oil and drain on paper towels. Dust with powdered sugar before serving.
