Eviscerare e sciacquare bene lo sgombro.
Tranciare lo sgombro in piรน parti.
Tagliare i pomodori a rondelle.
Tritare il prezzemolo.
Sbucciare l'aglio.
In una padella rosolare qualche secondo l'aglio e il prezzemolo tritato in extravergine.
Mettere subito i pomodori e aggiustare di sale e pepe.
Farli appassire 3/4 minuti.
Aggiungere un po' di vino bianco e i tranci di sgombro.
Sale e pepe a piacere e un po' di vino bianco.
Coprire per 5 minuti.
Girare i tranci e dare altri 3/4 minuti.
