Reduce heat to a simmer and add tortellini; cook until tender, about 3-5 minutes.

Stir in spinach and cook until wilted, about 1-2 minutes.

Season with salt, black pepper, and lemon zest to taste.

Remove bay leaves before serving.

Ladle soup into bowls and garnish with grated parmesan and parsley.
