In a saucepan, combine 500 ml of water and 400 g of white refined sugar, stirring to mix.
Turn on the heat and bring the mixture to a boil.
Once boiling, add 400 g of grated fresh coconut and stir.
Continue to cook while stirring occasionally to prevent burning.
After about 20 minutes, when the liquid has reduced, decide if you want a white or brown cocada.
For a brown cocada, continue cooking until it caramelizes slightly.
Add 2 cans of sweetened condensed milk and 30 g of butter to the mixture, stirring continuously to combine.
Cook until the mixture pulls away from the sides of the pan, similar to making a brigadeiro.
Once the desired consistency is reached, remove from heat and let cool slightly before transferring to a greased tray.
Spread the mixture evenly in the tray and mark where to cut before it fully cools.
