Rinse the coconut flesh.

In a pot, add the strained coconut water and 1 cup of additional water.

Add 3 cups of sugar to the pot.

Add a little cinnamon, nutmeg, salt, and vanilla extract to the mixture.

Add the coconut flesh to the pot.

Cook the mixture for about 30-40 minutes, stirring every 5 minutes to prevent burning.
