Preheat the oven to 160 C (320 F).
Whisk 1 large egg in a shallow bowl.
In a separate bowl, mix together 3 tablespoons of plain all-purpose flour, 1/4 teaspoon salt, 1/4 teaspoon garlic salt, 1/2 teaspoon black pepper, 1/2 teaspoon oregano, 1/2 teaspoon thyme, and 1/2 teaspoon paprika.
Heat 2 tablespoons of olive oil in a large frying pan over medium to high heat.
Dip the chicken breasts in the egg, then dredge in the flour mixture.
Place the chicken in the pan and fry on both sides until golden brown.
Remove the chicken from the pan and place it on a tray.
Put the chicken in the oven for 10 minutes to finish cooking.
Add 1 tablespoon of olive oil to the same pan and heat over medium to high heat.
Add a sliced onion and cook for 3 to 4 minutes until softened.
Add 2 cloves of minced garlic, 1/2 teaspoon oregano, and 1 teaspoon paprika, and stir.
Add 160 grams of sun-dried tomatoes, a sliced red bell pepper, and 1 tablespoon of tomato puree, and cook for 2 minutes, stirring gently.
Pour in 90 ml of white wine and allow to bubble for 2 minutes.
Add 240 ml of chicken stock and a pinch of salt and pepper, bring to a boil, then simmer for 5 minutes.
Add 90 ml of double cream, 50 grams of grated Parmesan cheese, and 90 grams of baby spinach, and stir everything together.
Cook for a couple of minutes until the spinach starts to wilt.
Check that the chicken is cooked through and not pink in the middle, then remove it from the oven.
Add the chicken to the sauce and cook for another couple of minutes.
Top with a sprinkling of fresh parsley and serve with potatoes, pasta, or bread.
