Green chilli chopped: 1 tbsp
Green pepper cut half sliced: 1 cup
Cabbage shredded: 1 cup
Ajinomoto: ½ tsp
Black pepper powder: ½ tsp
Soy sauce: 2 tbsp
Vinegar: 1 tbsp
Red chilli sauce: 1 tbsp
Tomato ketchup: 2 tbsp
Spring Onion chopped: ¼ cup
Boiled water: 3 litres

Boil 3 litres of water in a large pot.

Add noodles to the boiling water and cook until al dente, about 3-4 minutes.

Drain noodles and set aside.

Heat ¼ cup vegetable oil in a large wok over high heat until shimmering.

Add 1 tbsp chopped garlic and stir-fry for 30 seconds until fragrant.

Add ½ cup sliced onion, ½ cup julienned carrot, 1 cup sliced green pepper, and 1 cup shredded cabbage, stir-frying for 2-3 minutes until tender-crisp.

Add the cooked noodles to the wok, tossing to combine with the vegetables.

Pour in 2 tbsp soy sauce, 1 tbsp red chilli sauce, and 1 tbsp vinegar, stirring well to coat all ingredients.

Sprinkle ½ tsp Ajinomoto and ½ tsp black pepper powder over the mixture and toss to combine.

Add ¼ cup chopped spring onion, stirring for another 2 minutes.

Season with 1 tbsp salt to taste, mixing thoroughly.
