2 green plantains
2-3 cups cold water
3 capfuls vegetable oil
sweet onions

Run cold water on 2 green plantains for at least 10 minutes.

Peel the plantains and cut them into three parts.

Boil the plantains in a pot for 30 to 40 minutes on high heat, checking occasionally and adding 2-3 cups of cold water if the water gets low.

In another pan, add 3 capfuls of vegetable oil and slice up sweet onions to sauté them.

Remove the sautéed onions and set aside.

Cut the smoked sausages into bite-size pieces and cook them in the same pan used for the onions.

Flip the sausages occasionally and move them aside to add 4 pieces of queso paraffin to the pan.

In a separate pan, add 1 tablespoon of butter and drop in 4 eggs, cooking until brown on one side before flipping them over for 2-3 minutes.

Re-add the sautéed onions to the sausage and cheese mixture.

Check the plantains; they are done when a fork can easily stick into them.

Smash the boiled plantains on each plate, adding water from the pot and 3 tablespoons of butter until creamy, sprinkling with salt before serving.
