In a bowl, mix together 220 g of all-purpose flour, 300 g of sugar, 1 teaspoon of baking soda, and 1/2 teaspoon of salt until well combined.

Mash 2 ripe bananas in a bowl until chunky, ensuring they are very soft and mushy.

Add 2 whole eggs to the mashed bananas and stir to combine.

Add 125 ml of canola oil and 90 ml of buttermilk to the mixture, followed by 1 teaspoon of vanilla extract. Stir until well combined.

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir until just combined, ensuring not to overmix.

Prepare a 9x5 loaf pan with parchment paper or by buttering and flouring it.
