1

Preheat your waffle iron to medium high.

2

In a large bowl, combine 1 and 1/2 cups all-purpose flour, 1 tbsp granulated sugar, 1 tbsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, and 1/4 tsp nutmeg; whisk together.

3

Set the dry ingredients aside.

4

In a medium bowl, mash 2 medium bananas until smooth; this should yield about 1 cup or 245 g.

5

If bananas aren't ripe, bake them at 350°F for about 10 minutes until blackened to soften them.

6

To the mashed bananas, add 1/2 cup milk, 1 large egg, and 2 tsp vanilla extract; whisk until combined.

7

Pour the wet ingredients into the dry ingredients and gently stir together with a spatula until just mixed; do not overmix.

8

Add 1/4 cup melted unsalted butter to the batter and mix until combined.

9

Scoop about 1/3 to 1/2 cup of batter into the center of the waffle iron and close it.

10

Cook the waffles for 3 to 4 minutes until golden brown; check for steam to know when they are done.

11

Transfer the cooked waffles to a wire rack to cool and prevent them from becoming soggy.

12

Serve the waffles with banana slices and plenty of maple syrup.
