Lobster Mac and Cheese with Bacon Bread Crumbs

Cook elbow macaroni for about 5 minutes, one minute short of al dente, then drain and add 1 tablespoon of butter to keep the pasta from sticking.
In a pan over low heat, add a big knob of butter and let it melt.
Turn the heat to medium and add flour, whisking until the butter absorbs the flour.
Slowly add in whole milk and half and half while whisking.
Add black pepper to taste, and optionally salt, but the creator prefers not to add salt due to the saltiness of the cheese.
Whisk the milk mixture for about 6 to 12 minutes until it thickens enough to coat the back of a wooden spoon, performing the Wooden Spoon test.
Turn off the heat and add sharp cheddar, eminthal cheese, and mozzarella cheese (but not the Parmesan). Stir until the cheese melts.
Combine the cheese mixture with the cooked macaroni and lobster meat in the pot, mixing everything together.
Transfer the mixture to a greased 9x13 pan and even it out.
Bake in the oven at 350°F for 25 minutes.
When there are about 6 to 7 minutes left, add Parmesan cheese and some leftover lobster meat on top.
Garnish with chives before serving.
