Make a paste of spices by blending 9 to 10 Kashmir red chilies and 3 spicy chilies.

Add 10 to 12 cloves of garlic, 1 and 1/4 teaspoon cumin seeds, 3/4 teaspoon turmeric powder, and 1 inch of ginger to the blender.

Pour in 1 cup of white vinegar and a little water to help blend.

Grind the mixture into a fine paste.

Add the paste to 1/2 kg of thoroughly washed chicken pieces.

Mix the chicken with 1 teaspoon of salt and the spice paste.

Rinse the blender jar with 1 cup of water and add that water to the chicken mixture.

Put the chicken on the stove and cook until it reaches a boil.

Once boiling, add 1/2 teaspoon of sugar to balance the flavors.

Stir the chicken and cover with a lid, letting it simmer on medium to low flame for 15 to 20 minutes or until fully cooked.

Check the chicken after approximately 18 minutes to see if it's cooked through.

If the gravy is too much, continue cooking on high flame until it thickens.

Adjust the seasoning with more salt or vinegar if desired, adding 1 teaspoon more vinegar if needed.
