Barbeque Marinade

Cultural Context

Barbeque marinades are integral to Filipino cooking, often used during festive gatherings and family barbecues. The marinade enhances the natural flavors of meats, making them tender and flavorful. This dish reflects the Filipino love for grilling, with regional variations incorporating local ingredients like calamansi or pineapple. Today, barbeque marinades are popular worldwide, with many cultures adopting their own versions.

1

In a large mixing bowl, combine the following wet ingredients: Banana ketchup, Soy sauce, Vinegar, Cooking oil, Water. Stir well to blend the liquids together.

2

Add the dry seasonings: Brown sugar, Crushed garlic, Onion powder, Salt and pepper. Mix thoroughly until the sugar and spices are fully dissolved.

3

For Sweet-Style Barbecue Marinade: Adjust the sugar to taste (more for sweeter profiles). Let the marinade rest for at least 15 minutes to allow flavors to blend.

4

For Spicy Barbecue Marinade Variant: Add chili flakes or chopped fresh chili depending on the spice level you want. Optional: Add hot sauce or sriracha for an extra kick. Mix well and let it sit before using.

5

Cut pork or chicken into barbecue cuts or cubes. Pour the marinade over the meat and mix to coat thoroughly. Marinate for at least 2–4 hours, but overnight in the fridge is best.

6

Skewer the marinated meat onto bamboo sticks. Grill over charcoal or electric grill, basting occasionally with leftover marinade (boiled separately for safety). Grill until meat is fully cooked, slightly charred, and caramelized.
