Take 2 lb of clams and ensure they are closed tight.
Put clams in a bowl, cover with cold water and ice, and change the water throughout the day.
Scrub the clams to clean them and strain them.
Melt 2 tablespoons of butter in a large frying pan over medium-high heat.
Add olive oil to the pan.
Crack 4 pieces of garlic with the back of a knife and add them to the pan with a little salt to catch the juices.
Cook the garlic until it starts to turn golden brown.
Prepare coriander by removing the hard stalks and chopping the leaves.
Add the cleaned clams to the pan.
Pour in 2/3 cup of white wine and add bay leaves.
Sprinkle ground pepper over the clams.
Cover the pan with a glass lid to keep the steam in and help the clams open.
Cook until all clams are open, stirring occasionally to redistribute flavors.
Once clams are open, sprinkle chopped coriander on top.
Transfer the clams to a serving dish, leaving some sauce in the pan.
Cut lemon slices and serve them with the clams.
