Preheat the oven to 450°F (232°C).
Wash and dry about 2 and 1/2 lb of red potatoes, then dice them into 1/2 inch cubes without peeling.
Dice 1 large white onion into 1/2 inch pieces and set aside.
Remove the top and bottom of 1 large red bell pepper, slice the flesh into 1/2 inch pieces, and set aside.
Combine the diced potatoes, onions, and red bell pepper in a large bowl.
Add 1/2 cup of extra virgin olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of paprika, and 1/2 teaspoon of onion powder to the bowl.
Toss all the ingredients together until well combined and coated with the seasoning.
Transfer the mixture to a parchment paper lined baking sheet, spreading it into an even layer.
Bake in the middle of the oven for 15 minutes.
Remove from the oven, toss the vegetables, and return to bake for another 15 minutes or until the potatoes are tender.
Ensure the oven rack is at least 6 inches away from the broiler, then broil the potatoes at 500°F (260°C) for about 2 minutes until golden brown, watching carefully to avoid over-browning.
Toss the potatoes again and broil more if desired.
Remove from the oven and season with additional salt and black pepper to taste.
Allow the potatoes to slightly cool before serving.
