Add about half a teaspoon of onion powder, eyeballing to taste.
Add some Italian seasoning to the mix.
Toss the potatoes in the bowl until completely coated with the seasoning mixture.
Spray a baking sheet with cooking spray to prevent sticking.
Spread the coated potatoes on the baking sheet, skin side down for crispiness.
Place the baking sheet in a preheated oven at 400°F (200°C).
Bake for about 25-30 minutes.
After 30 minutes, remove the potatoes from the oven; they should be beautifully caramelized and have a nice texture.
Garnish the potatoes with fresh parsley before serving.
