Ripe plantains are a staple in Nigerian cuisine, often enjoyed as a snack or side dish. They are celebrated for their sweet flavor and versatility, commonly served alongside savory dishes. Fried plantains are loved for their crispy exterior and soft interior, making them a favorite in many West African households. Today, they are enjoyed globally, with variations in preparation methods and seasonings reflecting local tastes.

Zucchini offers a similar texture while being lower in calories.
Wash the fish thoroughly with salt and apple vinegar.
Wash 2 large onions for the recipe.
Blend the veggies (onions and any other vegetables) in a Ninja blender without adding water.
Add ginger and garlic paste to the blended mixture.
Add chili powder, black pepper, and a little curry powder to the mixture.
Add Maggie chicken seasoning and Maggie C seasoning to taste, along with Benny spice salt.
Fry the blended veggies for 3 to 5 minutes until ready.
Prepare the ripe plantains, which can be either ripe or not fully ripe.
Pour the veggie sauce over the fish and plantains, massaging it into the fish and plantains.
Transfer the fish and plantains to the oven to grill.
