Zucchini offers a similar texture while being lower in calories.
Cut the ends off the plantain.
Slice the plantain down the middle or along the side.
Peel off the skin of the plantain.
Cut the plantain into planks.
Heat coconut oil in a skillet over medium heat until hot.
Carefully slide the plantain planks into the hot oil.
Add a bit of cinnamon and red pepper on top of the plantains in the oil.
Fry the plantains until they start to brown on one side, then flip them over carefully.
Continue frying until they are golden brown on both sides.
Remove the fried plantains and drain on paper towels.
