Coconut oil adds flavor and is a healthier fat option.
Chop the ripe plantains into pieces, dividing them into two sections for easier handling.
Spread salt on the chopped plantains to ensure even coverage.
Blend the spices (cloves, black pepper, and any other spices) with some water until smooth.
Sprinkle chili pepper powder on top of the chopped plantains.
Mix the blended spices into the plantains gently without mashing them.
Cover the seasoned plantains and let them marinate for 30 to 45 minutes.
Heat cooking oil in a large skillet until hot, around 90°C.
Add half an onion to the oil for flavor.
Carefully add the marinated plantains to the hot oil, frying them gently.
Fry the plantains slowly, using a stick to turn them gently to avoid breaking them.
Remove the fried plantains from the oil once they are golden and crispy.
