1

Remove the outer layer of fat from both sides of the pork chops.

2

Trim off the silver skin to keep the pork chops flat during cooking.

3

Season both sides of the pork chops with Rattlesnake Bite seasoning.

4

Place the seasoned pork chops in the fridge until ready to cook.

5

Prepare the grill using the Slow N Sear or Weber charcoal baskets with 10 lit charcoal briquettes to maintain a cooking temperature around 250°F.

6

Light a waxed lighter cube and wait about 10 minutes for the charcoal to be ready.

7

Add unlit briquettes to the Slow N Sear or charcoal basket to maintain consistent cooking temperature and longer cooking time.

8

Place the grill on the setup and close the bottom vent to about one-third open.

9

Wait until the grill temperature reaches between 225°F to 250°F before placing the pork chops on the grill.

10

Place the pork chops opposite the charcoal for indirect smoking.

11

Insert a meat thermometer into the pork chops and close the lid.

12

Cook the pork chops until they reach an internal temperature of about 115°F.

13

Once at 115°F, sear the pork chops for about 30 seconds on each side until they reach an internal temperature of 135°F to 140°F.

14

Monitor the temperature closely while searing the chops, flipping them after 30 seconds and then again after a minute to achieve a golden brown color.

15

Remove the pork chops from the grill once they reach an internal temperature of 141°F.
