Sear the brisket in the oil for about 5-6 minutes on one side until browned, then flip and sear for another 4-5 minutes on the other side.

Add 5 smashed cloves of garlic to the cooker and stir.

Pour in beer (Guinness) to deglaze the pan, scraping up the brown bits from the bottom.

Add 15 ounces of canned tomato sauce, 1/2 cup of brown sugar, yellow mustard, chopped bell pepper, poblano pepper, and 1/2 sliced onion to the cooker.

Add 1 bay leaf, a couple teaspoons of Worcestershire sauce, and 1/2 cup of apple cider vinegar to the mixture and stir well.
