2 medium-sized onions
2 and 1/4 cups stock
1 cup water
1 tablespoon butter or margarine
4 teaspoons all-purpose flour

Slice the 2 medium-sized onions nice and thin.

In a saucepan, add the sliced onions and 1 tablespoon of butter or margarine.

Cook the onions until they are nice and see-through and lightly golden.

Add 4 teaspoons of all-purpose flour to the onions and cook for a couple of minutes to avoid a raw flour taste.

Pour in 2 and 1/4 cups of stock and 1 cup of water.

Bring the mixture to a simmer and let it simmer for 15 minutes.

While the soup is simmering, toast the slices of sourdough bread and melt some cheese on top.

After 15 minutes of simmering, taste the soup and add salt and pepper to taste, especially if using commercially made stock.

Top off the soup with a slice of the toasted bread with melted cheese.
