Peel and cut 1.5 kg of onions in half, then slice them thin but not too thin.

Add 60 g of butter and 2 tablespoons of olive oil to a pan and melt them down.

Add 2 teaspoons of brown sugar to the melted butter and oil and melt that down as well.

Add the sliced onions to the pan and sweat them down for about 1.5 hours, stirring every 15 minutes.

For the last half hour, remove the lid and increase the heat to let the onions catch on the bottom for added flavor.

2 to 3 minutes before the end of the cooking time, add in 2 crushed garlic cloves.

After the onions have cooked for 1.5 hours, add 250 ml of dry white wine to deglaze the pan, scrubbing the bottom gently.

Transfer the onion mixture to a big saucepan, add 2 bay leaves and 1.5 L of beef stock.

Add a good grinding of pepper and a little pinch of salt to the saucepan.

Cook the mixture on the stove for half an hour.

While the soup is cooking, grill some sourdough bread to make croutons and top with gruyere cheese, grilling further until melted.

Transfer the soup to bowls, add the croutons, and garnish with parsley.
