The dish has roots dating back to Roman times, evolving over centuries into the beloved recipe known today. It is particularly popular in bistros and brasseries across France and has become a staple in French cuisine worldwide.

Melt 1/4 cup butter and a little olive oil in a pan over medium heat.
Cut 4 cups of Vidalia onions uniformly and add them to the pan.
Cook the onions for about 5 minutes without stirring until they start to caramelize.
Add 1 teaspoon of salt and pepper to taste, then wait another 2 minutes.
After 5 minutes, stir the onions and lower the heat to medium.
Continue cooking the onions for about 20 minutes, stirring every 5 minutes until they are nicely caramelized.
While the onions are cooking, prepare croutons from a French baguette by placing them in the oven.
After 20 minutes, add 1/2 cup of white wine to the caramelized onions and mix well.
Add 2 tablespoons of flour to the mixture and stir to combine.
Warm up beef broth in two containers and pour it over the onions.
Mix the soup and let it simmer uncovered on medium to medium-low heat for another 20 minutes.
Prepare cheese or croutons for topping the soup while it simmers.
After 20 minutes, check the soup for flavor and thickness, adjusting seasoning if necessary.
Serve the soup in bowls, topping with croutons and Swiss cheese, then place under the broiler for 3 minutes until the cheese melts.
