1

Peel the onions and cut them in half, then cut them across to chop them into pieces.

2

Lightly separate the chopped onions into a bowl until all are done.

3

In a Dutch oven, melt 2 tablespoons of light butter.

4

Add the chopped onions to the pot and mix them with the melted butter.

5

Season the onions with 1 teaspoon of salt and 1/2 teaspoon of cracked black pepper, mixing well.

6

After the onions have reduced a bit, add 3-4 cloves of crushed garlic to the pot.

7

Add 2 bay leaves and 6 sprigs of fresh thyme to the pot, bundling the thyme for easy removal later.

8

Cook the onions on low heat for about 1 to 2 hours until they caramelize, stirring occasionally.

9

Remove the thyme and bay leaves once the onions are caramelized.

10

Add 1/3 cup of red wine and 1 tablespoon of balsamic glaze to the pot, cooking for about 5 minutes and scraping the caramelized bits from the bottom.

11

Pour in 2 quarts of beef broth and mix all the ingredients together.

12

Let the soup simmer for about 20 to 30 minutes to meld the flavors.
